Hello, I’m Nick.

My favorite foods are bread, sandwiches, pasta, and anything with gluten. I’ll have extra gluten please. Over the years I have mastered making fancy specialty sandwiches. Some of my best loved recipes include the softest bakery fresh bread.

But life had different plans for me. A 2023 diagnosis of Celiac disease ruined my chances at being the most famous amateur gourmet sandwich maker in the world. With my head down and a hand full of hard chewy sponge-like gluten free bread that will win no awards, I decided I must forge on.

As a new Celiac I’m learning to live the gluten free life. And there is an incredible amount to learn. My goal is to share the things I learn as I progress through this gluten free journey.
